It's already happened. IIRC someone even went so far as to slice up one of his rocks into sections and microscopically analyse them. Surprise, surprise it turned out to be a rock.

The "it's just a rock" reality is just too mundane for Ed, so he's opted for a more elaborate "the entire scientific community is conspiring against me" paranoid delusion instead.
