I've been processing for a while now and can't seem to
get past this percentage.

Some days it says a fraction higher, other days a fraction lower.

I know at this point its mostly the real die-hards crunching away,
but does anyone know about how many units a day I need to do to be
"above the average" so I can move a bit?

You haven't said how many WUs you have completed but about a week ago 
99.7% was around 10,000 WUs
