I recently changed my email on my Seti@Home user account

unsure how to change the clients email information if it is
already installed.

Any help would be greatly appreciated.

You don't need to do anything; your account is defined by an internal
number that doesn't change; this is the id= field in user_info.sah.
Your email address is just associated with the account number.

On any future install, you'll need to use your new email address, but
that's it.
